We founded EAT. in 1996 with the ambition of providing the best food, soup and coffee in London. The first shop opened on Villiers Street, London WC2 on October 12th and we were a bag of nerves. Frantic work on the food and the brand, the shop design and fitting out a kitchen so we could make the quality food we dream of... figuring out how to source the best ingredients and give fast, friendly service without any industry experience - these were our worries as we stood in uniform awaiting...
